Hard carving wax is intended to be worked with rasps, chisels, and rotary tools with the goal of having very crisp edges and fine details. Soft wax is better for producing organic shapes that are pushed and pulled to shape by fingers and wood and metal edge tools. Although this is somewhat limiting, I would expect hard wax to produce a result more like art deco or a finely sculpted face or mechanical object while soft wax might do hair, skin, fur, and perhaps scales.
